We finally went over to storage and picked up some of the Christmas decorations. Even with just a few of them up, it’s pretty festive in here already. Now all I need is a few nails for hanging stuff.
Arthur, it is very good. 2-3 pound pork loin in a soup pot covered with water. Add about a half cup of soy sauce and a large cut up onion. Simmer for about 4 hours until the roast is tender (mine fell in half when I was removing it from the broth). Remove the roast from the broth and set aside. Skim excess fat from the broth. Cook some Japanese Udon noodles or Chinese water noodles either in the broth or separately. Assemble in a soup bowl – noodles, onions and broth – and shred some of the pork over the top. Garnish with chives or slices of hard boiled egg or anything else you imagination can come up with. My grandmother called it “Chinese Pork Noodles” because of the soy sauce. It is a family favorite.
Prayer group this morning, and I suspect that it too will be the last until January 8th. Either that or we’ll switch days. Then I’ve promised to take a friend who has been undergoing chemo to Walmart. She hasn’t had a chance to just go out shopping for quite a while.
