I’ve tried several different scoops, and find the thick metal ones work well, the plastic ones are terrible, and the ones that can be used to scoop other food, with geared scraper, work best. I don’t know if the latter is what this strip is talking about, but I suspect so. Ice cream shops keep theirs in warm water when not in use, and swap scoops often, since a warm scoop prevents sticking.
