    Potatoes and tomatoes, and other vegetable, are nightshade plants which contain alkaloids. High amounts of alkaloids can make one sick. Some people are more sensitive to alkaloids. The green spots on the potato can make you sick.

    As we know potatoes aren’t poisonous here’s a nice way to prepare some.

    Potato Tart with Cheese   TORTA   DI   PATATE   AL   FORMAGGIO

    3 potatoes, boiled and mashed
    1 cup flour
    4 tablespoons olive oil
    1/2 cup canned tomatoes, drained
    1/4 pound Mozzarella cheese, diced
    2 tablespoons grated Parmesan cheese
    2 teaspoons marjoram
    1 teaspoon basil

    To the mashed potatoes add flour, salt and pepper and mix well.
    Oil the bottom of a large shallow baking dish and spread the potato mixture 1/2 inch thick on the bottom.
    Sprinkle well with 2 tablespoons olive oil.
    Add tomatoes, cheeses, marjoram, basil, salt and pepper.
    Sprinkle with remaining olive oil and bake in a hot oven, 400° F., for 30 minutes, or until cheese is brown. SERVES 4.

    Notes from me:

    The oil used to oil the pan is in addition to that listed in the ingredients.
    Have the oven heated to 400° F. before putting the prepared dish in.
    Use the middle rack. (This keeps it from direct exposure to your oven’s heat source.)
    Keep an eye on it from the 20 minute mark.
