    CHICKEN CHOW MEIN

    4 tablespoons cooking oil or chicken fat
    3 teaspoons salt
    1/4 teaspoon pepper
    2 cups sliced Chinese cabbage
    3 cups shredded celery
    2 cups canned bean sprouts, optional
    2 teaspoons sugar
    2 cups stock or water
    4 tablespoons soya sauce
    2 1/2 tablespoons cornstarch
    1/4 cup cold water
    2 cups sliced cooked chicken, cut in thin slivers or shredded fresh chicken
    1 8-ounce package thin noodles fried (see recipe below)
    2 hard-cooked eggs, chopped or sliced, optional

    Heat oil, salt, and pepper in a deep hot skillet; add all the vegetables, the bean sprouts last; sprinkle the sugar over them; stir.
    Add the stock or water; mix well.
    Cover the pan. Cook till boiling point, then turn the mixture over.
    Cover and let cook till boiling point, about 10 minutes in all.
    Stir, add the soya mixed with cornstarch and water; stir slowly while the mixture thickens. Add the chicken. Stir till all is thickened and smooth.
    Place fried noodles on a large platter or in 4 individual dishes.
    Pour the mixture over the noodles. Top with the sliced or chopped eggs.
    4 servings.

    HOW TO FRY NOODLES

    Buy the thinnest egg noodles available. Drop into boiling water. Remove at once. Drain.
    Spread in large colander, place over pan of boiling water, and steam 20 minutes, drain.
    Pan-fry in hot oil; or drop in deep hot oil and fry till crisp. Drain and use as directed.

    Notes from me:

    Chinese cabbage is Bok Choy
    If you’re adding bean sprouts drain them!

    Since when is getting married a sure thing that these things will change. If your spouse cannot cook, or is too busy playing video games to clean or do housework?

    My daughter is in Japan. Her husband is a soldier stationed there. She LOVES! spaghetti. The other night she tried making it “Japanese” style. The recipe said to take the spaghetti out of the boiling water before it is fully cooked & then, from what she described, stir-fry it the rest of the way. She has always been a picky eater, but she said it was good. Weird, but good.

    " Will you get married" it’s a first for Garfield! After 3 years (or more) of dating, will we see something new finally? Wedding, cohabitation, a new pet perhaps… If it is bring it on. I am tired of the same routine.
