    This is not a “cruel” meat loaf, Garfield.


    2 pounds ground beef
    1 egg
    1 cup soft bread crumbs
    1/2 cup milk (whole)
    1 teaspoon poultry seasoning
    2 teaspoons salt
    1/4 teaspoon pepper
    1 medium onion, minced
    Mashed-potato Coating
    Melted butter or margarine

    Mix all ingredients except last 2.
    Pack into 9” x 5” x 3”loaf pan.
    Bake in moderate oven (350°F.) about 1 1/2 hours.
    Let stand 10 minutes.
    Drain off liquid and turn meat onto an ovenproof platter.
    Spread thickly with Mashed-potato Coating, covering loaf completely.
    Crimp with a fork, or use a pastry tube, to finish edges.
    Brush with melted butter.
    Brown under medium heat in broiler; or bake in very hot oven (450°F.) 10 minutes, or until browned. Makes 8 servings.

    Mashed-potato Coating

    6 medium potatoes
    1/4 cup butter
    1/2 cup hot milk (whole)
    1 egg yolk

    Cook peeled potatoes in boiling salted water until tender.
    Drain and mash well.
    Add butter, milk and egg yolk; season to taste.
    Beat until fluffy.

    Beef, onions, breadcrumbs, salt, pepper, spices of your choice, parmesan cheese, a couple of eggs to hold it together. MILK?

    Tomato sauce to cover it.

    That is how my mom did it.
