MEAT LOAF WITH OVERCOAT 2 pounds ground beef1 egg1 cup soft bread crumbs1/2 cup milk (whole)1 teaspoon poultry seasoning2 teaspoons salt1/4 teaspoon pepper1 medium onion, mincedMashed-potato CoatingMelted butter or margarine Mix all ingredients except last 2.Pack into 9” x 5” x 3”loaf pan.Bake in moderate oven (350°F.) about 1 1/2 hours.Let stand 10 minutes.Drain off liquid and turn meat onto an ovenproof platter.Spread thickly with Mashed-potato Coating, covering loaf completely.Crimp with a fork, or use a pastry tube, to finish edges.Brush with melted butter.Brown under medium heat in broiler; or bake in very hot oven (450°F.) 10 minutes, or until browned.
