    What’s with this either/or stuff???
    Holidays are no time for dieting. BOTH, and homemade rolls too. Oh – and gravy, cranberry sauce, braised brussel sprouts, sweet potatoes, turnip mashed with butternut squash, green beans, steamed pudding with brandy sauce, mince pie, and a lot of TUMS.

    Stuffing is the bomb! I remember when I was a kid, though, I was scared to eat it! Same with drinking egg nog. lol

    I made great stuffing with sausage, chestnuts and all when I was cooking for all the family. I tasted but never wanted a serving myself; we used to have cranberry jelly back then, but cranberry orange relish is so simple to make. I have a good stash of berries in the freezer and my valencias have just started being really ripe. I prefer to cook my turkey BREAST only and fill cavities with some onion, carrot and branch herbs for flavor (Herbs and butter under the skin) and toss out that filling. I also toss the skin to neighbor’s dogs who are underfed, tho’ skin lovers would like it (crisp). After I carve, I give the bones to the birds in my back yard. I’ll make soup from some when I use up the frozen stock I have.

    I will either have my pumpkin soup on Thanksgiving or some sliced yams (I cook only from scratch). This year, since the baking pumpkin is a new recipe, I’ll probably have that and (cooking for just myself) I will only have a few other things each day. I bought a handful of green beans which should be good with soup and turkey (7.8# free range breast).
