Amanda, you must be doing something wrong. I like to slow-cook a roast every now and then (it’s actually long-cooking, to be more accurate) and I can use a cheap cut and still come up with a super tender, juicy meat that lasts me several days since I live alone.
Try soaking it with balsamic vinegar and Worcestershire sauce, add a little brandy or bourbon, salt & pepper and a variety of herbs. And don’t forget to add in potatoes and carrots for the last 45 minutes of cooking.
If you have a time machine, one product you do NOT need to go back in time to purchase is a basic crockpot. They were $9.99 forty to forty-five years ago and the basic models have stayed the same price. We only finally replaced it a couple – maybe 5 – years ago (tho admittedly upgraded for a few dollars more), but I’d noticed how consistent the basic price has been for the no bells and whistles model.

Get a decent, old-fashioned rice cooker instead. The non-pressure kind. Korean. Cuckoo. 10 cups.
I even make original French terrine in it.
