Pancakes make a good dinner! Of course, they should be having some protein food, like eggs. and some fruit or vegetables with them, not just a big pile of starch, fat and sugar.
But if you use extra eggs and powdered milk in the batter it helps, too. You can even add mashed cottage cheese for extra protein.

Dinner was a rotisserie chicken with Alfredo noodles and peas. Pancakes would have been less mess..Very nice tribute to France Tony.
