It wasn’t that margarine was bad, but the dairy industry saw it as a threat to butter sales, and big dairy had great lobbyists. In some states, it couldn’t be sold with yellow coloring already mixed in. Instead, it came with a dye packet and you had to massage it into the unappetizingly white margarine until it was all mixed together.

It is said that the stuff is only one molecule away frombeing plastic… You can set the stuff out in the hot sun and the flies won’t even land on it !

You do not absorb cholesterol, the molecule is too big. Chemicals found in margarine and other highly processed foods damage the walls of your blood vessels and cause the liver to create cholesterol to coat the damaged sections. Nitrates in smoked and cured meats also do the same kind of damage.

Canada’s got nothing on Wisconsin. The latter banned margarine until the 60s to protect the Dairy industry. In the state where I grew up the “Sacred Cow” was a reality.

Margarine, until “butter flavoring” was awful, particularly in the war years and after. Yuck! It came in a sealed bag with a dot of coloring (the stuff was white) you had to break with your thumb and then massage into the crap.

Wisconsin used to have a ban on yellow margarine. You could only buy white. Back in the 1950’s.

Don’t forget (and it’s anybody’s guess about the relative safety) folks with lactose intolerance. Margarine is better than nothing, and doesn’t taste too terrible if you find the right brand.

I’ve been using it for years, and it doesn’t appear ……………..

I like butter, I grew up on homemade butter ( I would help churn it while watching TV). So did my wife, but she likes the taste of margarine better. But one thing always bothers me, the whole one molecule away from plastic thing. One molecule can be two atoms up to millions of atoms. The cliche is meaningless.
