Bananas aren’t ripe when they’re yellow, in fact, bananas that are “perfect for banana bread” are ripe.
My mother never saw yellow bananas until she moved from England to Canada.
I’m told by Jamaicans that Plantains are best cooked when they’re black.
I have never liked bananas that are past yellow. As to the ones that have turned brown? Those are on the same list as apple juice…. do not eat.
