    Not sure why you want to substitute out the quinoa, but seems like any cooked and cooled whole grain could be used: bulgar, barley, rice, couscous (not really a grain, but…), anything else you can find where you shop… Each different grain will give the salad a different overall flavor and texture.

    I’m not surprised that you can’t get quinoa in Delhi; it’s from South America, and is only starting to get popular here in the US, partially because there’s no gluten. Kasha (made from buckwheat) might work, if you can find it.
