Key Lime Pie (in two parts)
From the back of a Christie “Honey Maid” box of Graham cracker crumbs:
Graham Cracker Crust
Combine 1 1/4 cups “Honey Maid” Graham Crumbs with 1/4 cup melted non-hydrogenated margarine or butter.
Press on bottom of 9-inch spring form pan or bottom and sides of 9-inch pie plate.
Notes from me: Don’t use margarine!!! The taste is terrible!!!
It really is that simple, just press and spread the graham crumbs until they’re evenly distributed.
I always use a pie plate.
For you chocics out there (we have alcohol and alcoholics, we don’t have alcoholoholics) I once bought Oreo cookie crumbs by mistake. They work well.
Now that you have the pie crust ready…..
Key Lime filling:
3 egg yolks
300 ml (10 U.S. fl oz.) sweetened condensed milk
1/2 cup Key Lime juice
2 or 3 drops of green food colouring (optional)
Whisk everything together.
Preheat oven to 325° F
Pour filling into pie crust
Bake 30 minutes
Cool to room temperature
Chill for 1 to 2 hours
Top with whipped cream and a garnish.
Notes from me:
I’ve had this recipe a while, origin unknown.
Bake on the top rack of your oven.
I have, successfully, used commercial lime juice made from concentrate. It’s a one to one substitution.
If you don’t use the food colouring, the pie looks a bit wan, but it’s still tasty!!
