Good morning, everybody… (loooong post today)

There’s homemade sausage meat at “Adam @ Home” today.

And for Dry, I hope this is what you were asking about. (and that the recipe compares favourably with your Mom’s.)

Filled Cookies (Credited to: Mrs. Ira F. Zartman)

    1cup chopped raisins
    1/2 cup sugar
    1/2 cup water
    1 tablespoon flour
    1/2 cup chopped walnuts

Place these ingredients in a saucepan and cook together until thick and syrupy.
    Set aside to cool.

    1/2 cup shortening
    1 cup sugar
    1/2 teaspoon salt
    1 egg
    1/2 cup cream
    1 teaspoon vanilla
    3 1/2 cups flour
    1 teaspoon baking powder
    1 teaspoon soda

Cream shortening, add sugar and salt, beaten egg, cream, and vanilla.
Sift flour with baking powder and soda and add to mixture.
Turn out and roll on floured board, very thin.
Cut in shapes with round cookie cutter.
On half the rounds spread filling that has cooled.
Top these cookies with the rest of the rounds, pressing top and bottom firmly together at edges.
Bake in 350° oven, in greased pans, for 15-20 minutes.

    Notes from me:
I’m guessing that the cream referred to is whipping cream. (only because this is a farm type recipe)
The soda is, again a guess, baking soda.

It’s “National Fried Scallops Day,” today.

This is a little fancier than just fried scallops, but the tastier the better!

    EGGS AND SCALLOPS SAUTÉ

    2 cups small fresh scallops
    5 tablespoons cooking oil
    1 teaspoon salt
    1/4 teaspoon pepper
    1/2 cup chopped onions
    1 tablespoon soya sauce
    4 eggs
1/2 cup chopped scallions, green and white

If scallops are large, cut in small pieces.
Heat oil; sprinkle salt and pepper into the hot oil.
Add the onions and cook till clear.
    Add the scallops.
Stir and cook, uncovered, on low heat.
    Dash soya sauce over them.
Beat the eggs lightly, mix with scallions; pour over the scallops and cook only till the eggs are set.
    Serve at once. 4 servings.

On this day in 1871 Cordell Hull was born. He won the Nobel Peace Prize in 1945 for his efforts to maintain peace while serving as United States Secretary of State from 1933 to 1944 (when he resigned due to ill health). He also made many “good-neighbor” reciprocal trade treaties with many Latin-American counties, and was instrumental in the first plans of the United Nations. Indeed the concept of the United Nations was his.

That’s all today folks, and maybe too much.
