    I keep hoping we’ll get a chance to see how Sophie’s doing from her pov. I imagine her abductors to be well-meaning, but clueless when it comes to cats. Maybe she’ll get frustrated enough to make a jail break, and find her own way home?

    Oh! How trying this recipe then? I found it on the NYT, and I’ve been using it for years. The recipe was designed to be eaten relatively quick, but it stores quite well in the fridge. I don’t know how shelf stable it is using the classic boil-in-water method, but it should be fine, right? Anyway, this tomato jam is tasty and thickens up nice. I’m not fond of jalapenos, so I use a pinch of cayenne instead for a kiss of heat.

    Yield: About 1 pint

    1½ pounds good ripe tomatoes (Roma are best), cored and coarsely chopped

    1 cup sugar

    2 tablespoons freshly squeezed lime juice

    1 tablespoon fresh grated or minced ginger

    1 teaspoon ground cumin

    ¼ teaspoon ground cinnamon

    ⅛ teaspoon ground cloves

    1 teaspoon salt

    1 jalapeño or other peppers, stemmed, seeded and minced, or red pepper flakes or cayenne to taste

    Combine all ingredients in a heavy medium saucepan, bring to a boil over medium heat, stirring often. Reduce heat and simmer, stirring occasionally, until mixture has consistency of thick jam, about 1 hour 15 minutes. Taste and adjust seasoning, then cool and refrigerate until ready to use; this will keep at least a week.

    My husband was out late for a goodbye party for one of his co-workers, so I had a grilled cheese sandwich for dinner last night. I like a mix of strong cheddar with a bit of mozzarella for a nice gooey cheese-pull. I have it with a dab of tomato jam on the side. I made the jam using Roma tomatoes, sugar, fresh grated ginger, ground cumin, and cinnamon. It’s a nice savory sweet condiment that balances out all that cheese.
