Coconut Carrot Salad
1 cup flaked coconut
1 1/2 cups shredded raw carrots
1/4 cup seedless raisins
2 tablespoons lemon juice
1/2 teaspoon ground ginger
1/4 cup mayonnaise
Combine all ingredients in a bowl; mix well. Chill. Serve on crisp lettuce with additional mayonnaise. Garnish with drained canned mandarin orange sections, if desired. Serves 4 or 5.
