    The National Garden Bureau has announced that Beet is the 2018 Vegetable of the Year. Modern varieties are sweet, having less of geosmin, an organic compound produced by microbes in the soil does give beets an earthy taste. Sliced thin, drizzled with olive oil and salt, bake 20 minutes at 350. Option sprinkle with herb or spice of your choice. Even beet haters will like them.

    Most people will tell you that they don’t like beets—as they are enjoying eating them—because they don’t know what beets are. They think it’s some kind of turnip or something.
