The trick is to use multiple steams till the spears are tender, but not soggy. I cooked for a mother and her two young sons, once. Both boys weren’t willing to eat at first, but the younger boy did try them and found he really liked them cooked my way. By the time the older boy decided he wanted some, too, it was too late as all the broccoli was gone.
