    This brings up a point that my roommate can’t quite grasp. Once a package is opened, you can forget about the date. Especially with things like sandwich meat. It doesn’t matter if it’s dated three weeks from now, if it’s been open for more than a week, it’s highly questionable

    thebird55 is right! When I was a kid, my mother canned food. ‘Canning’ was actually putting food in canning jars, putting on a special lid, heating it in a special cooker to over 220º for enough time to kill anything in the jars, then watching them to be sure they were properly cooked. When the special lid ‘popped down’ into a dip, they were ready and could stay on the shelf for more than a year, waiting for us to eat it another day. If the special lid didn’t ‘pop down’ then that jar was set aside and we would eat that food within a week.

    We did this over 50 years ago! And properly canned food was safe. Very safe.
