We had on and off rain all day so I just stayed inside. Around noon I was peeling slicing and blanching 4 yams for the freezer when we had the only intense rain of the day (with a little thunder and lightning) then roasted my lunch for 10 minutes (had bites of fresh cantalope with the 10 min. dried figs stuffed with mozzarella and wrapped with prosciutto). This might be an appetizer for some, but it filled my plate enough to be my supper. I’ll have my mini pizza with jicama, red pepper and cucumber tomorrow, and turkey breast with some of the yams and black beans the next day. Cooking for one is not a problem.
