    Nonsense! Corned beef is even better as corned beef hash, or corned beef pasta bake. But real corned beef has too much salt for cats, and the hash and pasta bake include onions.

    IT is the second day that it really tastes salty and I can’t handle that. I did not realize that salt is bad for cats. They much prefer their food to human, so no problem there.

    Good gravy yes! Corned beef hash with potatoes and onions and a dippy egg on top for breakfast! Break that yolk and let it run into all those crevasses and it’s so yummy! Can’t wait.

    Trevor-Hotep: Glad to meet you all. I think I can find some flowers that will suit. Right here we have Bee Joyful Balm. It’s always a favorite of bees. And over here we have some Glittering Goldenrod.

    Clio: Just the thing. Mind if we have a fly around.

    Trevor-Hotep: Not at all. Take as much pollen as you like.

    Trish: And who is this small and white flower?

    Trevor-Hotep: Oh, that’s Blossom-Neige. Every morning she greets me.

    Time to make corned beef hash! Good with some eggs on the side! Unhealthy as can be but a good way to make use of that leftover corned beef. My wife is not a big fan of corned beef so if I want to have some on the 17th I usually go to a nearby Irish pub which serves up a nice plate, normally to go, but yesterday we did sit down and have a couple of pints of Smithwicks while we watched a bit of the NCAA March Madness. I have read that first Thursday and Friday of March Madness results in an extremely high number of people calling in or planning ahead by burning a vacation day or 2….. This year you got 2 events on the same day. Another fact: the person who usually wins the office “pool” on picking winners is usually someone with zero knowledge of the sport, either just picking higher seeds, going with names of mascots or simply the team colors they like. All in all a fun diversion for the spring season.

    In our house, any leftover corned beef is attacked the next day with the fervor of starving wolves on a deer carcass…IF there IS leftovers & IF they make it to the next day. I usually make as much as my 6-qt stock pot will hold, to try & get more’n one meal out of it. With this year’s prices, I had to get a much smaller sized chunk, so, one meal it is! …sigh…

    Au contraire mon frère,

    The next day is when you use the corned beef to make Rueben Sandwiches with swiss cheese, sour kraut, and 1000 island dressing on dark rye bread. Now, let me tell you my Corned Beef Hash recipe:

    2 to 3 tablespoons unsalted butter

    1 medium onion, finely chopped (about 1 cup)

    2 to 3 cups finely chopped, cooked corned beef

    2 to 3 cups chopped cooked potatoes, preferably Yukon gold

    Kosher salt and freshly ground black pepper

    In a medium frying pan, saute’ the onions in butter until they are tender. Mix the potatoes and corned beef and then mix into the onions in the Pan. Pat the mixture flat with a spatula in the pan and cook until the edges appear crispy. Use the spatula to flip the hash and brown the other side. Put a serving in the middle of a plate and add an over-easy egg on the top.

    Y’all. These things you like to make with corned beef is making me so hungry! There was a place my husband and I would go to in Houston called Victor’s Delicatessen and they had the best Ruebens and breakfast items. Pretty sure they are still there- off of FM 1960.How I wish I could go to a deli, diner, ANYWHERE! Celiac disease has robbed me of my favorite pastime, which is trying new hole in the wall places and all the fun things they have to offer. Now we stick to one place.

    I have a similar conundrum. It’s not that I dislike leftover corned beef, there just never seems to be a right time to eat it. It was delicious yesterday, but I will have to try hard not to let it sit in the crockpot on my counter until it erodes.

    Whoa, whoa, whoa, I won’t sit quiet at this nonsense. I think I might enjoy chopping the corned beef, cabbage, potatoes, onions, and carrots and frying them up into hash with a couple eggs the next morning more than the boiled dinner the night before. And I do love the boiled dinner too. Corned beef leftovers are great!

    Well, there seems to be a very vocal contingent of commenters here who are defending leftover corned beef as a valid meal option, especially as hash. Switch around the letters of “corned beef,” and it spells “orb defence,” so that makes perfect sense.

    I would eat that stuff every single day if it was at all feasible. And the potatoes, carrots, and cabbage are better the next day! I love a bowl of that with a little butter and broth. Yum! Every year I mourn the last of my leftovers.

    I did not make corned beef for St. Pat’s, but I did cabbage. Well, Hungarian cabbage. Fry up some bacon and put aside. Then fry shredded cabbage (I buy coleslaw mix as a shortcut) in bacon grease with a little salt and sugar and serve with egg noodles (or potato dumplings, if you have more time than I do) and cut up the bacon and put it on the top or on the side. It is absolutely the most delicious thing imaginable, and I eat mounds of it. I only do this about once a year because I so pig out on it. This year I found some really nice egg noodles, with great flavor and texture.

    I just boil a head of cabbage; then open a tin of corn beef, heat it up, and serve it on the cabbage leaves. Simple I know, but it works for me. ;)
