Idiosyncratic waiters are problematic. In the 70s, I took a date to a newly opened “tea room” in Santa Barbara. The waiter pulled out a third chair and chatted for a couple of minutes before taking our order. When he left, we both said, “Do you know that guy?”, then laughed.
