My mother was Danish and she called her butter cookies “Refrigerator Cookies”. She would make long rolls of dough, wrap them in cellophane, and keep them overnight in the refrigerator. Next day, cut the rolls onto the cookie sheets and bake ’em up. The only “shape” was round, but boy were they good!

My mother made these too. She put chopped pecans in as well. Haven’t tasted anything even close. Think I’ll try to find her recipe. Yum
