Everyone knows that a gingerbread house is off limits until Christmas morning. Anyone who wants to eat dusty gingerbread can do so first thing in the morning.
If you melt marshmallows and use it as mortar to hold the the gingerbread slabs together, it will never come apart. It sets up like concrete. Microwaved gummies are good for strengthening the slabs, too, by the way.
