    Eggplant tacos does sound unappetizing to me too. Maybe Andy can do spaghetti and meatballs… by utilizing spaghetti squash and takoyaki.

    I dunno – I’ve had eggplant sandwiches, wraps, and spring rolls, and all were delicious. A switch to a taco shell should also yield positive results.

    I’m kind of a “hard-ass” mom: my girls aren’t allowed to leave the table until they’re DONE. Had a battle with our younger daughter, who hated last night’s dinner…but she ate every bite (although, in compromise, I DID allow her to pick out the pineapple pieces).

    I don’t know about Tacos, but one of my favorite foods as a child was what my grandmother called “Poor Man’s Caviar” which is just a chopped eggplant salad

    If you prepare eggplant correctly, it takes on the flavor of the spices.

    We always had to eat what our Mom cooked. Fortunately we all agreed that the proper way to prepare eggplant involved a garbage can.
