I did too. Fortunately, my mom was a graduate of Le Cordon Bleu, plus she studied later in New Orleans for Cajun and Creole cooking. I’m no French chef, but I can rustle up some pretty mean grub.

hawg, I almost envy you, except that my mom grew up a Cajun and we got those meals all the time. I’m happy to say I learned more than a few recipes from her before she passed away.
Speaking of Cajuns, BP has announced that they’re no longer hiring Cajuns to assist in the spill cleanup. After hiring Boudreaux, Thibodeaux, and Fontenot and telling them to clean as many pelicans as they could, they returned to find that Boudreaux had cleaned 56 birds, Thibodeaux had made a roux, and Fontenot was cooking the rice.

We have oil in the MS Sound right now. Be on the beaches by Sat. BP has run out of the orange boom used to surround and contain the mess before it hits shore. Idiots. Have friends out there right now. They are not telling us the whole story. Two tropical depressions to watch out there also.
