A local school district added vegetarian lunch options and vegetarian parents asked the school to make sure their kids ate them. There was an immediate black market in hot dogs & hamburgers serving the vegetarian children market. Capitalism is nature at work.
I also understand, from a newspaper article about our local (Chicago suburban) high school district, that they are on the verge of dropping the program because 1. the kids won’t eat it; and 2. it’s so low in calories that they’re not satisfied. I wish a study would be done on obesity by ethnicity. Some diets don’t translate well to more urban or even suburban environments. And when parents were themselves raised on convenient foods with quick return on satisfaction (i.e., salt, sugar, fat), they are not in a good position to provide better meals to their families. Further, with new studies constantly coming out contradicting what we “knew” about nutrition, especially fat and sugar, to force an unpalatable diet on anyone is just plain stupid.
Dogday: studies of the “Asian” diet over decades, as well as in the tribal areas of the Caucasus where longevity and health is the rule, indicate a healthy, non-preservative, and yes palatable diet, is far healthier than the junk food and chemical-filled diets in the U.S.. Much of that “convenience” in “convenience foods” is the result of marketing, and profit making. Fighting such things as “home economics” programs in schools has even been part of it, teaching kids to open a package, not prepare meals.
I’ve a theory ’bout “Fanatical Do Gooders”, FDGs. FDGs never consider human nature when proposing good deeds. Hence, the black market I mentioned. The Veggie victim kids hated being different and having to eat those institutional vegetarian meals. So they acted just like kids and tossed the green junk and took their appetites elsewhere.
I LOVE Brussels Sprouts! We grew them when I was kid. Funny looking plant. I’ve never tried them with ham, though. Sounds good. We just steam them and serve with butter. Yummy.

Fewer typos.
