Tex-Mex is a lot more Tex than Mex – all over the US, but just in the far north of Mexico. Chili, San Antonio, 1870s; enchiladas, Albuquerque, 1880s; tamales, prehistoric as far north as Nebraska and south as Peru; etc. A lot like “Chinese” most of which was invented by Cantonese immigrants in San Francisco, mid 1800s.

I’m astounded at the artist’s ability to show weight gain/loss with just subtle artwork, like tiny double chin, or slight more/less curve to the face…. He knows his stuff! (Or stuffing/lack of stuffing!)
