    Apple and Sweet Potato Casserole

    1 can (2 lbs.) sweet potatoes, sliced lengthwise*
    2 cups sliced peeled apples, about 1/4 inch thick
    3/4 cup maple-blended syrup
    1/4 cup melted butter
    1 teaspoon salt
    ( *or use about 4 cups sliced cooked sweet potatoes )

    Place potato slices in greased 12×8×2-inch baking dish.
    Arrange apples slices on top of potatoes.
    Combine syrup, butter, and salt; pour over potatoes and apples.
    Cover and bake in a moderate oven (350° F.) for 45 minutes.
    Remove cover and continue to bake another 30 minutes, or until apples are tender, basting frequently. Makes 8 servings.
    Casserole may be made ahead of time and reheated.
    Add syrup, if needed.

    For me, even just the smell of apples gives me severe nausea. I have to avoid apples.

    I have no idea how British Columbia operates its power supply or why they thought they had to raise your rates either time.
    You know but didn’t specify.
    .
    Canada used to have a law requiring the sale of electricity to the USA slightly cheaper than it could be produced in the USA.
    The fun thing about that law was that it always made it uneconomical to develop electrical power supply near Canada and put a strangle-hold on American dependency.
    The result was that Canadian hydroelectric power was being sold at nearly the same rates as coal-fired, gas-fired or nuclear powered energy.
    This was a huge boon to the people of Canada by keeping us dependent.
    .
    Economics is fun, I should study it someday.
