    About ten years ago, the debate on the calcium iron oxalate in spinach, rhubarb leaves, beet greens (chard), and similar things apparently came to an end. The determination was that the oxalate not only wasn’t absorbable, but interfered with iron absorption.

    I like spinach.

    I thought rhubarb leaves were toxic. At least, that’s what my mother told me. But then again, she told me a lot that wasn’t right.

    Fresh spinach tastes great – if you don’t overcook it.

    I love spinach, uncooked and as well as cooked. Canned is faster.

    @Dry and Dusty

    Thanks. I have never eaten, nor been tempted to eat, rhubarb leaves, but it’s nice to know Mum was right. Do love the stalks, though.
