    Bake your steak! (Sorry, pot-heads, not that kind of bake.) A steak is, after all, only a thin roast. Then use hollandaise. It’s good!!.

    Hollandaise Sauce

    2 egg yolks
    1/2 teaspoon salt
    Dash of paprika
    Dash of cayenne
    1/2 cup softened margarine or butter (USE BUTTER ONLY!!!) (Unless your taste buds are dead.)
    1 tablespoon lemon juice

    Beat egg yolks till thick and lemon coloured; add salt, paprika and cayenne.
    Add 3 tablespoons softened margarine or butter, beating in one teaspoon at a time.
    Add remainder of margarine or butter alternately with lemon juice.
    Serve with cooked asparagus, beans, broccoli or kale.
    Serves 5.
    Hollandaise Sauce may also be served with fish.

    This recipe is exactly as written. There is, you will note, no cooking.

    If you have chrome tableware, this is perfect sauce for you to use.

    After all, there’s no plate like chrome for the Hollandaise.
