    And here, in two parts, is a Lobster Thermidor recipe.
    Part one is instructions on boiling lobsters, and part two is the Thermidor recipe, which calls for boiled lobster but leaves out how.

    Boiled Lobster

    Fill a deep kettle with enough water to cover lobsters.
    For each quart of water add 1 tablespoon salt. (5 quarts imperial is 6 quarts U.S.)
    Bring water to a rapid boil.
    Grasp live lobster across middle of back and plunge head first into water.
    With a wooden spoon, push lobster under water.
    When water has returned to a boil, reduce heat and simmer 15 minutes for first pound, 5 minutes for each additional pound.
    Remove from water and cool.

    Set lobster on its back, and with a sharp knife or scissors, slit open on underside from head to tail.
    Remove dark intestinal vein that runs through body at the centre.
    Cut off membrane.
    Discard sac or “_lady_” behind the head.
    Serve hot or cold with lemon and drawn butter.

    Rustico Lobster Thermidor

    2 boiled lobsters (about 1 1/2 lb. each)
    1/8 tsp. dry mustard
    2/3 cup sliced mushrooms
    Paprika
    3 tbsp. butter
    1 1/2 cups milk (whole)
    3 tbsp. flour
    1/4 cup grated cheese
    1/4 tsp. salt
    3 tbsp. sherry
    2 tbsp. finely grated cheese

    Cut lobsters in half lengthwise, remove meat from body and claws.
    Save body shells.
    Cut lobster meat into bite-size chunks.
    Saute mushrooms in 1 tbsp. butter.
    Put rest of butter in the top of a double boiler, stir in flour and seasonings, add milk slowly and cook until thickened.
    Stir in grated cheese until melted, add lobster, mushrooms and sherry.
    When piping hot, spoon into lobster shells, sprinkle with 2 tbsp. finely grated cheese and broil about 2 minutes, or until cheese is golden brown.

    For those who missed the link, the lobsters escape and attack. Her Maj can save some cash. This only needs boiling water instead of the traditional oil.
