    The bison is hardly endangered.

    Not that many n the wild, but it’s about as endangered as a Black Angus or Holstein.

    There was a place not far from where I used to work that had Buffalo Burgers.
    A little pricey, but they were really good.

    They do eat kangaroo in Australia – some species are quite common, and are indeed used for meat.
