The bison is hardly endangered.
Not that many n the wild, but it’s about as endangered as a Black Angus or Holstein.

Those which we eat are raised for the purpose. If you don’t mind eating meat, they’re about as good as anything else.

There was a place not far from where I used to work that had Buffalo Burgers.
A little pricey, but they were really good.

They do eat kangaroo in Australia – some species are quite common, and are indeed used for meat.
