    Food expenses used to take up an huge chunk of people’s incomes, and nowadays it’s a much smaller fraction. I’m not foolish enough to think that there aren’t “organic” food producers who exploit our desire for healthier fare, but there’s a lot of good stuff out there if we can be willing to pay a little more for it. Maybe not triple the price, but 50% more won’t kill my family, and the sacrifices are relatively small - go out one less night per month, keep my phone/iPod for more than 6 months, stop buying expensive bottled water, etc. And take some time to learn a few simple cooking techniques. I see people buying processed garbage all the time when they could get much more fresh food for the same price, but they never learned to cook anything outside of the microwave. This is most prevalent among poorer people - maybe an outreach program offering simple culinary classes could do a lot to improve our nation’s health.
