    Authentic original tortillas are made with corn (maize) masa — naturally gluten-free. Flour tortillas didn’t even exist in the New World until wheat was brought over from Spain. As far as I’m concerned, corn tortillas have much better flavor and match the food style better than flour tortillas.


    If you want a ‘burrito of sadness,’ load it with jalapeños, tomatillos, habaneros, powdered cheese sause, partially cooked beans, and wrap it in a pasty flour tortilla.

    I agree completely, but it is hard to find corn tortillas in some stores. Fortunately, there is a Mexican grocery store near us; they also sell Coke made with sugar, not corn syrup.

    And that’s why anyone who is eating that way for any reason other than they have to, will not stick with it.

    It is sad. But waaaaaaaay better than being sick all the time and not knowing why.

    That sounds just like a Taco Bell Burrito, when you think about it.

    Try being someone who can’t eat glutenous foods or foods containing corn and corn-based products (do you have any idea how many products contain corn starch, corn syrup, or corn flour?).

    Being a Celiac, Mexican restaurants are usually safe for me. And Chipolte is gluten free,(except for the burrito)!
    I recently found raw, uncooked corn tortillas and keep them in the freezer.

    I’ve been a diagnosed celiac for about a decade and a half. Corn alone is not a glutenous product. Corn allergy is a totally different animal. As an avid label reader, I know corn/fructose is in way too many places it doesn’t belong.

    It’s great when you frequent a Mexican restaurant that is familiar with how to cook gluten-free — or is at least able to understand your directions. But I have had language barrier (thus consequential) issues at some places I hadn’t been to before. So when going to one of these new places, I always carry a translated copy of what the diet requires. Most are glad to see it and ask if they can keep a copy. Remember, it’s not just the food, but cross-contamination that can get you.
