    I like to use bacon grease in cooking.
    .
    Two-thirds monounsaturate, about thirty percent saturated fat.
    .
    One wonders what our going to vegetable oils in the 1960s vs. animal-based oils has done.
    .
    I get a kick out of the anti-saturated fat crowd. While we have studies indicating monounsaturated oils raise HDL and lower LDL, and studies indicating that polyunsaturated fats lower both HDL and LDL, in all these years there are still no studies that indicate saturated or even artificially-saturated oils (trans fats) raise either HDL or LDL. But we do have studies indicating coconut oil and cocoa butter don’t raise either HDL or LDL.

    Best way to prepare bacon. On a slotted roaster pan in a hot oven. Bacon stays flat, fat drips thru. Be sure to rotate pan 180º half way thru for even cooking. Try it, you’ll like it.

    And then you can go home and make this….

    BACON RAREBIT

    1 cup diced bacon
    2 cups milk (whole)
    3 tbsps. bacon fat
    3 tbsps. Five Roses Enriched Flour (still available in Canada, but any all purpose flour may be used)
    1 cup grated cheese
    1 tsp. dry mustard
    Salt and pepper
    1/4 tsp. paprika
    Toast or Crackers

    Cook diced bacon until crisp. Make a sauce of bacon fat, flour and milk. Add grated cheese and mustard; stir until cheese is melted and sauce smooth. Add seasonings. Serve on toast. Sprinkle crisp bacon over each serving.
