    Make maple mousse!!

    From: “A Guide To Good Cooking with Five Roses Flour” (TWENTIENTH EDITION revised, 1962)
    Published by: Lake of the Woods Milling Company, Limited Montreal – Winnipeg under the supervision of Pauline Harvey

    MAPLE MOUSSE
    1 cup scalded milk
    2 egg yolks
    Few grains of salt
    1/2 cup maple syrup
    2 egg whites
    1/2 tsp. vanilla extract (real not artificial)
    1 cup whipped cream


    Pour scalded milk slowly over slightly-beaten egg yolks and salt; turn into upper part of double boiler and stir constantly over hot water until the mixture coats the spoon; remove from fire, strain and add maple syrup.
    Cool thoroughly, add vanilla.
    Turn into a small freezer, and freeze to mush; open freezer, add the stiffly-whipped egg whites and the cream, whipped until stiff.
    Continue freezing until stiff.
    After freezing, repack in ice and salt and allow the Mousse to ripen several hours before serving.
    Chopped walnut or pecan meats may be added.

    From the glossary in the book: Scald – To heat liquid to a temperature just below the boiling point. A thin skin forming over milk indicates sufficient heating.

    As near as I can tell, “Turn” is used in the sense of "I’m turning in to bed.”

    And in December 2012, it was reported that about 6 million pounds of that maple syrup had been stolen.

    Trust they rotate the stock. What do they do with the old stock?

    That would be 545,454.5 gallons of syrup.
    That is 6,000,000 divided by 11.
    Maple syrup is 11lb to the gallon.
