    In the words of that Great American Philosopher, John Wayne, “A man’s gotta do, what a man’s gotta do.” Jonah had finally been placed in a position where he cannot depend on Toni, and must do the right thing. After all, what can he do with the kid, except stay and work. Stay and work is a package deal.

    Of course it smells great. It was cooked in a commercial equipped kitcken that had been inspected and approved, by people that run a clean kitchen, then transported in hot food “warmers” to the storefront where it was held at over 170 F until served. Perfectly safe to eat and the inspector knows it! Food at Gene and MaryLu’s was always perfectly safe to eat. Regulations do NOT always make sense. How much will it cost Gene and MaryLu to do USELESS work to get into compliance? It could be enough to put then out of business. Hopefully, not.

    They have a "Real, Inspected, Commercial Kitchen AND the proper transportation equipment for bots hot and cold for. What they don’t have is the Inspected Commercial Kitchen on the primacies of their storefront. This is a Regulation problem NOT a food sanitation problem. Can Gene and MaryLu afford to build a new kitchen at their storefront or do they go out of the food service business at their storefront? We will soon find out

    I did Public Water Supply Permitting and Compliance as a Professional Engineer for over 15 years. The above is a random set of numbers used to cite regulations. Here is a real example:

    62-555.350(10) of the Florida Administrative Code in all its’ glory. No, you don’t need to read the whole thing.

    The supplier of water must report any abnormal occurrences immediately as required by Florida Administrative Code Rule 62-555.350(10). Suppliers of water shall notify the State Warning Point (SWP), the appropriate Department of Environmental Protection (DEP) District Office or Approved County Health Department (ACHD), and water customers in accordance with the following procedures in the event of the following circumstances.A) Suppliers of water shall telephone the SWP at 1-800-320-0519 immediately (i.e., within two hours) after discovery of any actual or suspected sabotage or security breach, or any suspicious incident, involving a public water system.B) Suppliers of water shall telephone, and speak directly to a person at, the appropriate DEP District Office or ACHD as soon as possible, but never later than noon of the next business day, in the event of any of the following emergency or abnormal operating conditions:Page 7Requirements for Community Public Drinking Water Systems • The occurrence of any abnormal color, odor, or taste in a public water system’s raw or finished water;• The failure of a public water system to comply with applicable disinfection requirements; or• The breakdown of any water treatment or pumping facilities, or the break of any water main, in a public water system if the breakdown or break is expected to adversely affect finished-water quality, interrupt water service to 150 or more service connections or 350 or more people, interrupt water service to any one service connection for more than eight hours, or necessitate the issuance of a precautionary “boil water” notice in accordance with the Depart

    But, they cannot prepare, transport, and serve the same food 1 mile from their home WITH AN INSPECTED COMMERCIAL KITCHEN, to their storefront shop on the main road. All because of 123.4B.c(1).

    They were using the exact same procedures and equipment that would allow them to prepare, transport, and serve serve the exact same food, over a 4 hour period, at a wedding reception 25 miles away,

    They cater. They have all the correct equiptment for transporting and holding both hot and cold food. They know what they were doing, how to do it, and were doing it right. A model operation of proper food handling. Where he is going to nail them is 123.4B.c(1).- No kitchen on the primises

    How do you know they do that? So far, Gene and MaryLu are well ahead of the inspector. They are experienced in food service and run a clean shop. They, have the right answer for all his questions and conjectures.
