Commander Davidson Bulloch, a former Confederate Navy submarine captain, gets more than he bargains for when he signs on as the first captain of Maryland's new "Oyster Navy" and sets out to rid the Chesapeake Bay of illegal oyster dredgers. Beset with an aging crew of misfits and his cantankerous iron-clad steamer, The Layla, Davidson quickly realizes he's dealing with more than just some purloined oysters; the nefarious pirate Treacher Fink has hatched a plan to summon the ghost of a legendary Chesapeake Bay waterman who has the power to control the sea and everything in it.

I happen to like squid better than oysters, but seafood preferences are highly idiosyncratic.

Ahhhhhh! Stir fried squid. Chewy and gummy at the same time. Just close your eyes and eat it. Tastes like………(you thought I was going to say chicken) SQUID.
And Commander is right no one would recognize that his ship is a side paddle steamer with GUNS. Looks like an Oyster ship to me too. Of course darkness helps. Just mind the sand bars and mud banks. The Chesapeake Bay is known for those hazards.
And there is a very old saying.
“The best laid plans of mice and men often go astray.” This is not going to go well for the Commander. He has not even left the dock. Will that thing float if it released from the pier?
This is going to be good.
It is worth the wait.

Yeah, that would be a bad idea. He would probably cuss you out in Chinese and you would not know to laugh or be angry. But I have learned never make a man with a chopper angry. You might find something else in the meal.

That boat needs a cannon or better yet a Gorloff gun, a Russian variant of the Gatling gun that I saw on the prow of one old ship. 5 barrels. They could hide under a fake part of the ship.

Actually, germ theory was already in place, and sanitation ideas were taking off in the 1870s. (Louis saved the French silkworm industry from a nasty infestation of Nosema bombycis in 1870.) Since our hero is a former Confederate captain, and the American Civil War ended in 1865, it can be hardly said that this is before people understood about germs and disease.
Granted, whether these sailors know or care is another matter.
TL;DR, People know about disease.
