    Most everything but liver is good if you don’t know what it is. Good cooks are good at hiding “weird” stuff. :)

    I like Italian style tripe in red sauce. The Lincoln Inn in Dupont, PA has the best. Don’t knock it til you tried it.

    My dad lived in Germany shortly after the war when there was a serious food shortage and said horse isn’t too bad – that it’s much like beef. My grandfather had a big problem with the idea of horse meat though.
