    Norwegian Honey Cookies

    Store for 2 weeks in an airtight container before using—but they will keep for much longer.

    1 cup honey
    1 cup sugar
    2 tablespoons lemon juice
    1 tablespoon chopped candied citron
    1 tablespoon chopped candied lemon peel
    1 tablespoon chopped candied orange peel
    2 2/3 cups blanched almonds
    2 cups sifted flour
    1/4 teaspoon cinnamon
    1/4 teaspoon cloves
    1/4 teaspoon nutmeg
    1/2 teaspoon cardamom

    Heat honey, but do not boil.
    Stir in sugar, lemon juice and citron, lemon and orange peels.
    Grind 2 cups of the almonds in a nutgrinder or in electric blender.
    Add almonds to fruit mixture.
    Sift flour with spices.
    Add to fruits and blend thoroughly.
    Cover and chill 3 days.
    Set oven at 325°.
    On floured board, roll very thin.
    Cut with cookie cutters into any desired shapes.
    Bake on greased and floured cookie sheets 8 to 10 minutes.
    Cool and spread with Lemon Icing.
    Place 1 almond from remaining almonds on each cookie.

    Lemon Icing

    Stir about 2 tablespoons lemon juice into 1 cup sifted confectioner’s sugar. Beat until spreading consistency.

    Notes from me:

    “Greased and floured” is just that. Grease the baking sheet with butter or shortening. Thoroughly coat the greased sheet with flour. Stand the sheet on edge and tap off the excess. This helps prevent sticking.

    Because these are so thin, start watching them from the 6 minute mark.

    We have proof. Sluggo is not related to the kids in the Family Circus. Not so sure about Nancy. She may be a distant cousin.

    Maybe if Sluggo heard this he’d like the term better.

    Also want to add then when I was 5 years old, I remember some other kids talking abou tit being being dangerous outdoors because there were yellow jackets flying around and I actually expected to see Yellow colored Jackets (clothing) flying around.
