    Both were owned by Spain for centuries. Cross cuisine isn’t surprising. Filipinos loved the introduction of peppers from the Americas.

    Not sure where you heard that. It’s basically a pork shawerma, brought by Lebanese immigrants to Mexico. Shawerma is made with lamb, but lambs are relatively scarce in Mexico. Pigs are common, hence the change. ‘Al Pastor’ translates to ‘Shepherd Style’.
