And as it turns out, lard and butter are better for your health than margarine or hydrogenated vegetable shortening.

When people only ate foods with butter and lard, there weren’t as many overweight people as there are today. Go figure.

You don’t absorb cholesterol whole from foods with high cholesterol content… the molecule is too big, so it gets broken down into smaller component molecules during digestion. Your liver makes cholesterol on demand, and it needs those smaller molecules to do so. Damage to nerves and blood vessels triggers cholesterol production to coat and protect the damaged areas. The chemicals in hydrogenated oils damage blood vessels. The nitrates in smoked and preserved meats damage blood vessels. Packaged refrigerated meat is naturally grey, nitrates are added to make them look red. Highly unsaturated oils damage nerves and blood vessels by leaching out their protective fatty linings. I’m sure you can figure it out from there.
