    I know I’ve posted this before, but I can’t remember which strip..

    “Peanut Brittle”

    A light, porous brittle.

    1 cup light corn syrup
    1 cup sugar
    1 tablespoon margarine (I use butter)
    1/4 teaspoon salt
    2 cups raw Spanish peanuts (see Note)
    1 teaspoon baking soda

    Put first 4 ingredients in saucepan over medium heat and stir until sugar is dissolved.
    Add peanuts and cook, stirring 15 to 20 minutes, or until peanuts are a light golden brown (296° F. on candy thermometer).
    Remove from heat and stir in soda (mixture will foam). Spread quickly on well-greased baking sheet.
    When cool break in pieces. Makes about 1 1/2 pounds.

    Note Raw (unroasted) peanuts are available in nut shops, health-food stores and occasionally in supermarkets.

    One fellow I knew in college would make it with habaneros. It was surprisingly good.

    “Oh…. do you know the muffin man? the muffin man, the muffin man….” btw that’s not how I was taught the ’Peanut Song" when I went to camp… the words “last night” were replaced by “just now” but that was in Michigan, I suppose they might be different in Philly.
