    Pepperoni Pepper Corn Muffins

    1 cup yellow cornmeal       250 ml
    1 cup all-purpose flour       250 ml
    1/4 cup granulated sugar       50 ml
    4 tsp baking powder       20 ml
    1/2 tsp salt       2 ml
    1/4 cup corn oil       50 ml
    1/4 cup finely chopped onion       50 ml
    1 red bell pepper, diced       1
    1/3 cup chopped pepperoni       75 ml
    1/4 cup chopped green onion       50 ml
    1 extra-large egg, beaten       1
    1 cup milk (not fat free) {Use whole milk.}      250 ml

    Preheat oven to 400° F (200° C) and prepare muffin tin.
    Combine cornmeal, flour, sugar, baking powder and salt; set aside.
    In a skillet, heat oil over medium heat.
    Sauté onion and red pepper until tender.
    Stir in pepperoni and green onion.
    Stir into cornmeal mixture, then stir in egg and milk.
    Spoon into prepared tin and bake for 20 minutes, until fully risen and browned.
    Makes 12 muffins.

    Notes from me:

    Elsewhere in the book it says to use a 12-cup muffin tin, each cup having a 4 fluid ounce / 125 ml capacity. Line with cupcake liner or use cooking spray. Fill to about 3/4 full.

    on Garfield & Friends who always fleecing a gullible
    Jon out his money, and Garfield (and Odie) always thwarts
    him before Jon becomes penniless.
