    Actually, for me, that was the best place for vegetables:mixed in with the potatos.

    POTATOES SUPREME

    Cook potatoes the night before.

    6 Medium potatoes, peeled
    Salt
    1/2 cup butter or margarine (use butter, it’s better)
    2 cups shredded Cheddar cheese (“Old” cheddar)
    1/3 cup chopped green onions
    1 pint dairy sour cream (U.S. pint / 473 ml)
    1/4 teaspoon pepper

    Cook potatoes in small amount of salted boiling water until tender; drain and refrigerate, covered, overnight.
    Next day, grate potatoes coarsely.
    Mix with remaining ingredients and 1/2 teaspoon salt.
    Put in greased shallow 1 1/2 quart baking dish and bake in moderate oven (350°F) about 35 minutes.
    Makes 6 servings. (Or one, for Garfield.)

    I’ve never seen him be so picky before. No, not OCD, I have that and I can live if there is a pea in my mashed potatoes. What I can’t stand is if the peas are canned and the “mashed potatoes” are instant! Blech!
