    good morning and happy sunday locos. Today is Trinity Sunday. Ukraine is celebrating Kiev Day and Cultural Workers and Folk Artists Day. Poland and Sweden are celebrating Mother’s Day.

    CHICKEN KIEV

    From Russia, thin pieces of chicken wrapped around butter.

    1 1/2 sticks butter (6 ounces)
    6 chicken breasts
    Fine dry bread crumbs
    3 eggs
    Fat for deep frying

    Halve butter lengthwise; cut in twelve 2” pieces.
    Chill until very firm.
    Cut chicken breast in half; remove bones.
    On wet board, pound chicken into thin cutlets.
    Put a piece of butter in center of each.
    Roll chicken around butter; fold securely so butter cannot escape during cooking.
    Secure with toothpicks.
    Roll in bread crumbs; dip in eggs beaten with 2 tablespoons cold water; roll again in crumbs.
    Fry in hot deep fat (375°F. on frying thermometer) 3 to five minutes.
    Drain and put on cookie sheet in hot oven (425°F.) 5 minutes.
    Makes 6 servings.

    You could, but I wouldn’t. Margarine just tastes terrible in my opinion.
    Think about it this way: How many butter ads have you seen that say: “We taste like margarine!!”
    Now how many ads have you seen that go the other way?

    True, but you can’t buy butter in small packs, and it doesn’t keep long.
