    good morning and happy monday locos Today is Lunes de Pentecostés (aka Whit Monday). Quebec is celebrating National Patriots’ Day and all of Canada had Victoria Day. Cuba has Día de la Independencia.

    Butter Tarts

    Make your pastry for the tart shells and cut them in rounds big enough for your tart tin using a cookie cutter. Grease the tin, and set the shells in.

    The filling

    ½ Cup brown sugar
    ¼ Cup corn syrup
    3 Tablespoons soft butter
    1 egg (well beaten)
    ½ teaspoon vanilla (real only) (artificial affects the taste for the worse)
    Pinch of salt
    1 ½ teaspoons vinegar (white)
    1/3 cup currants or raisins (plump them before measuring)
    ¼ cup chopped walnuts (optional)

    (I always make these with currants only.)

    Mix all ingredients together (two eggs may be used if desired, for a softer, less sugary filling.)
    Fill unbaked pastry tart shells until 2/3 full.
    Usually fills 24 small tart shells using only one egg.
    Preheat oven to 375 degrees and bake until set (on second rack) (top rack is first) about 12 to 15 minutes depending on size.
    Longer if bigger.

    Notes from me:

    If you don’t have a tart pan, use a greased muffin tin.
    Plumping currants or raisins is simply pouring boiling water over them and letting them stand 5 minutes. Pour off the water, and dry on a paper towel.
    Keep a close eye on the baking after the 12 minute mark. When the top of the pastry is golden, the tarts are done.
    I have never used walnuts, and have never missed them.
    A pinch of salt is just that. Make a small pile of salt; pinch the pile between thumb and forefinger and that’s a pinch.
    After the tarts are removed from the oven, immediately remove carefully from the tin, and cool on a cake rack.
    If you don’t eat them all at once, they will keep in a sealed container in the fridge for 2 days. (They may keep longer, but they’ve never existed for longer than 2 days.)

    HAPPY VICTORIA DAY!
    I just learned from a fellow Canadian that Queen Victoria is the Grandmother of all European Royalty to this day. She was a German Princess, a fact we tend to forget.

    Hey johnny! Terrible what has happened in Oklahoma. The weather system alarms were in place and gave enough warning, but sometimes you just can’t control the massive destruction of a tornado THAT large. My oh my! I am praying for those poor people. It could happen to any of us, sure makes you stop and think. Sometimes when we think things aren’t going our way, we should stop, smell the roses and thank God that we have it all a bit better.
