    @ cleokaya (THE FLASH) (from yesterday)

    There is a holiday in the U.S. celebrated by people of Italian descent, Columbus Day.
    Granted, it’s not until October 12, but since as you said yesterday, their food is better, let’s eat early.

    Duck in Wine

    ANITRA AL VINO

    From:” THE ALITALIA BOOK OF AUTHENTIC ITALIAN COOKING”

    by: Barbara Stacy

    Publisher: THOMAS Y. CROWELL COMPANY
    New York Established 1834

    1 clove garlic, split
    4 tablespoons olive oil
    4-pound duck, cut into serving pieces
    1 tablespoon chopped parsley
    1 teaspoon poultry seasoning
    1/2 teaspoon thyme
    Salt
    Pepper
    2 cups (16-ounce can) Italian tomatoes, chopped
    1 cup dry white wine
    1/2 pound mushrooms, sliced
    10 green olives, sliced

    Sauté the garlic in olive oil until it is golden and discard the garlic.
    Brown the duck in the oil over high heat for 10 minutes, stirring occasionally.
    Add the seasonings and tomatoes, reduce the heat, and simmer, covered, for 30 minutes, skimming from time to time.
    Add the wine and continue to simmer the duck, uncovered, for 30 minutes longer.
    Add mushrooms and olives and simmer for 30 minutes more, stirring occasionally.
    Skim well before serving. SERVES 4.

    good morning and happy monday locos. Same holidays as yesterday still celebrated: tabby’s bday, st. pat’s day, and evacuation day. In addition. Greece has Clean Monday and Mexico has Natalicio de Benito Juárez.

    @Alexikakos

    Perfect. I was looking for a good recipe for duck. Though I may leave out the green olives. I love green olives alone or in salad, but in a hot meal, I don’t know.

    Isn’t that dangerous for Rayna’s machine to be out on the street alone?

    I love duck and actually had a duck confit hash on Saturday. The recipe sounds good.

    LilG will eat almost everything but olives. I love all types of them, in dishes or just on their own.

    @Alexikakos

    Thank you for your recipes Alexikakos.

    By the way, is your name Greek? In Biblical (Koine) Greek, “kakos” means “down”, or “bad”, depending on it’s usage. No doubt “Alexi” means something too, but I forget what.

    I wasn’t here yesterday because I spent the night in the hospital with my friend. I hardly slept at all, and I have had a full day.
    I’ll likely sign off early, but will go off to read my queue.
