Are the squash supposed to be reduced by a third? Usually that term refers to liquids. I’m not sure a solid vegetable will reduce that much, maybe it will wilt a little.
FYI, “saute” is a fancy French word for “fry!” And, yes, ole dad’s recipe would be worlds tastier than ANYTHING with “boiled” in the ingredients! There is NOTHING so tasty that you can’t destroy it’s flavor by boiling it. Just saying.

That is the beauty of a produce stand/diner. You can put the water on to boil before you pick the corn.

I generally don’t like boiling since it removes much if not all the nutrients you need.
