In the Andes regions of Ecuador where I live and in Peru and Bolivia, the say there are over 4,000 native species of potato.I will say that the very few varieties I have tried have been singularly delicious. They are generally smaller than their Notre Americano cousins but tastier and not chemically treated or genetically altered. They are also incredibly cheap.Plenty of reds and whites – haven’t found a blue one yet unless you count the one that’s been hiding out in my cupboard for way too long !
